Crock Pot Stuffed Meatballs Spaghetti and Sauce By Paula Deen

Paula Deen Recipe

Ingredients
1 lb. ground beef
1 lb. ground pork
4 tablespoons fresh parmesan cheese, grated
1 to 1 1/2 cups Italian dry bread crumbs
3 large eggs
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cloves garlic, finely minced
1 tablespoon fresh basil, finely chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon dried oregano
4 oz. fresh mozzarella, divided into 12 pieces
3 tablespoons olive oil
2 jars of your favorite red sauce
2 pounds spaghetti, cooked al dente

Directions

In a large mixing bowl combine ground beef, ground pork, parmesan, eggs, salt, pepper, garlic, basil, parsley and dried oregano. Add bread crumbs 1/2 cup at a time until mixture is not to wet and can be formed into balls easily. Form mixture into 12 balls using your thumb to press a hole in the center. Insert a piece of the fresh mozzarella into the hole and close the hole by pushing the meatball mixture around it to secure the mozzarella inside each ball.

Heat a large saute pan over medium heat and drizzle olive oil into it. Add meatballs and cook until just browned. Using a slotted spoon, transfer meatballs into a slow cooker. Pour red sauce over the meatballs and cook on LOW for approximately 5 hours. Serve the stuffed meatballs and sauce over spaghetti

Cheeseburger Mac Attack Crock Pot

5 ounces of pasta
10 ounces of ground turkey
1 teaspoon onion powder
2 tablespoons ketchup
24 ounces frozen Green Giant cauliflower and cheese (or broccoli and cheese)
3 wedges the Laughing Cow light creamy swiss cheese

Makes 8 servings

Cook pasta for about 5 minutes (you want it to be very al dente) and drain

In a bowl, mix turkey, onion powder, ketchup. Place in crockpot.

Add frozen veggies and cooked pasta to crock pot and gently stir. Cover and cook on high for 3 to 4 hours or on low for 7 to 8 hours, until turkey is fully cooked.

Stir mixture and crumble turkey. Add cheese wedges and stir until evenly distributed

Cheddar Spirals Crock Pot

Ingredients
1 package (16 ounces) spiral pasta
2 cups half-and-half cream
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1/2 cup butter, melted
4 cups (16 ounces) shredded cheddar cheese

Directions
Cook pasta according to package directions; drain. In a 5-qt. slow cooker, combine the cream, soup and butter until smooth; stir in the cheese and pasta. Cover and cook on low for 2-1/2 hours or until cheese is melted. Yield: 12-15 servings.

Carnitas and Guacamole Crock Pot

Carnitas and Guacamole

Guacamole
3 Avocados
Lemon or lime, (I buy organic, but this totally up to you!)
1 cup pico
1 Garlic clove
Black pepper

Carnitas
3 lbs pork shoulder or 3 lbs pork butt
4 cups chicken broth, hot
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons cumin
1 tablespoon chili powder, medium hot
2 teaspoons ground coriander
1/2 teaspoon ground black pepper
1 tablespoon lime juice
1/4 teaspoon salt (to taste)


Fat free sour cream
Light tortillas

Directions

Spray slow cooker with cooking spray
Add hot chicken broth to crock pot.

Add spices and lime juice to crock pot and mix well into chicken broth.

Add pork to crock pot.

Cover and cook on High for 4 to 6 hours or until most of water is reduced and a thick gravy like sauce forms.

Shred meat and mix into thickened cooking sauces.

Make the guacamole: Mince the garlic and juice the lemon or lime.

Mash the avocados together with the garlic, lemon or lime juice, sea salt and black pepper to taste. Add the pico and stir.

Remove the meat and let drain on paper towels.

Serve with optional warm sprouted flour or corn tortillas. Top with the guacamole and sour cream.

Garnish with salsa, chopped onion, cilantro, and jalapeno slices, if desired

Cheese Burger Bites Crock Pot

Cheeseburger Bites
Ingredients
1 lb lean ground turkey
2 tablespoons ketchup
2 teaspoons instant minced onion
1 teaspoon yellow mustard
8 oz American cheese loaf, cut into 2-inch cubes (2 cups)
24 miniature burger buns, split

Toppings, as Desired
Dill pickle chips
Sliced plum (Roma) tomatoes
Shredded lettuce
Additional ketchup and mustard

Preparation
In 10-inch skillet, cook turkey over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Stir in 2 tablespoons ketchup, the onion and 1 teaspoon mustard.

Spray 3 1⁄2- to 4-quart slow cooker with cooking spray. Into slow cooker, spoon beef mixture. Top with cheese

Pork Tenderloin Barbeque Crock Pot

pork tenderloin and place both loins in crockpot. Pour your favorite bottle of barbque sauce (I use Corky's), 2 teaspoons of minced garlic, 2 teaspoons of Tony Chachere's Original Creole, 2 dashes of onion powder, salt and pepper to taste then walk away. Cook on low for 6 hours and it peels away.

Make barbque sandwiches or better yet, barbque nachos

A1 Steak Roast Crock Pot

1 roast, 2-3 pounds
1 pound baby carrots
1 pound red potatoes
1 chopped onion
1/2 cup A1 steak sauce
1/2 cup water
1 packet onion soup mix

Place roast in crock pot. Cover with onions, carrots, and potatoes.
Combine soup mix, A1, and water. Pour this over the veggies.
Cook on low 7-8 hours.
